We brought large copper kettles from New York. Originally manufactured in 1925 for a candy making company, we use them in our coating process today. As these big kettles full of fruit or nuts are rotated, we add meted coatings, a little at a time. This is called panning, and its all done by hand. With candy coatings like mint or smooth milk chocolate, the best of California's crops are slowly transformed into the delectable gems of Sun Empire Foods.
